Cod In Bacon Blankets

Ingredienten: Cod in Bacon Blankets & Asparagus Spears
300g cod fillet
4 rashers thinly sliced lean back bacon, rind removed
2 tsps olive oil
Asparagus, steamed
1 small onion or 2 shallots, finely chopped
2 tbsps half fat crème fraiche
1 tsp wholegrain mustard
1 tbsp chopped flat-leaved parsley
Voorbereiding:
Bereidingswijze: Preheat the oven to 200 deg C/gas mark 6. Wrap the cod fillets in the bacon. Heat the oil in a non stick pan and fry the fish for a couple of minutes then transfer to a non-stick baking tray and place in the hot oven. Bake for about 10-12 minutes until cooked. Meanwhile, make the crème fraiche sauce. Fry the onion in the oil, stir in the mustard, parsley and crème fraiche. Serve the cooked cod together with the steamed asparagus and crème fraiche mustard sauce. Season to taste with freshly ground black pepper. Serves 2. Serving Suggestion: Serve with a fresh mixed salad of your choice. Serve with tiny new potatoes, served hot or cold.
